Coconut Meringue Kisses

A wonderfully whimsical treat on a hot summer day would be a crunchy, airy, light meringue cookie. But why stop there? Why not add a mini kiss to the center and make it a chocolate meringue kiss cookie?!

Here is a recipe for Coconut Merinuge Kisses. You can certainly use any flavoring of your choice. Raspberry, strawberry, mint.. the list goes on and on! Enjoy!

Ingredients
4 egg whites
1 cup sugar
1/4 teaspoon cream of tartar

1 teaspoon coconut extract
1/4 to 1/2 cup chocolate chips or mini Kisses

Directions
1. Heat oven to 225°F. Line cookie sheets with parchment paper. Arrange chocolate chips or mini Kisses on cookie sheets.
2. In small bowl, combine egg whites, cream of tartar and salt; beat until soft peaks form. Gradually add sugar, beating until very stiff peaks form, about 10 minutes.
3. Add extract; beat 1 minute at high speed. 
4. Pipe meringue over the chocolate onto the paper-lined cookie sheets.
5. Bake at 225°F for 2 hours or until crisp and dry. Cool 30 minutes. Remove cookies from paper. Store in an airtight container.
