Colorful Bell Pepper Rollups

I'm having a party today. It's one of those direct sales home parties - jewelry. And even though I invited 110 people and only 4 are coming, I made some snacks for my illustrious guests!

Since it's 100° out and I am certainly NOT turning on my oven, I wanted to make some things that are cool and refreshing. I decided on a cheese, cracker and pepperoni plate, a taco cheeseball (from another home party company!), chips and salsa and these adorable bell pepper rollups. Here's whatcha gotta do!

Colorful Bell Pepper Rollups

Ingredients
1 bell pepper of each color - red, orange, green and yellow
24 mini tortillas (soft taco size)
1 small tub soft cream cheese

Directions
1. Wash peppers thoroughly and cut into strips.
2. spread a layer of cream cheese on a tortilla.
3. Place one strip of each color pepper on the cream cheese and roll up the tortilla.
4. Cut into rounds.

That's it. It doesn't get much simpler than that! Gotta love easy!! Enjoy!
