Off the Cuff - Fried Rice

So the checkered husband says some of the best things I make for dinner are the recipes I just make up on a whim, off the top of my head, or "off the cuff," if you will. I walked in from the 100°+ heat this evening from work and asked the checkered husband what he wanted for supper. I was shocked and appalled taken aback by him asking, "what do you feel like making?" Truth be told.... nothing. It's a hundred degrees out and I don't feel like makin' nuthin'.

But, I was hungry, so I had to make something. I decided on fried rice. I had a cup of rice (two different kinds, but it's okay) left, some frozen bell pepper strips and some mushrooms. I also have a brand new dozen eggs! So, fried rice it was! 

I had the rice on the stove and the veggies sauteeing in a pan when people came by for something (another story for another day) and didn't realize the timer was beep-beep-beeping away in the kitchen for God knows how long before I went back in. The rice on the bottom of the pan got a little crispy, but not burned. The veggies got a little brown, but still yummy!

I tossed an egg into the veggies and scrambled it a little, then threw in the rice (crispy bits and all!) and a few shakes of soy sauce (note to self: by low sodium soy sauce next time) and let it do it's thing for a minute or two. It was the best fried rice I've ever made!

Now, of course you know that this means I'll never be able to do it again. *Sigh*
