Grape (Yes, Grape!!) Pie

Are you tired of the same old fruit pies? Blueberry, peach, apple, cherry? Why not try a grape pie!? It's both tart and sweet and since grapes are always in season, you can make it all year long! Break out of that boring fruit-pie-rut and go grape! Here's my recipe. Enjoy!

Ingredients
3 cups seedless grapes, washed and dried
3/4 cups sugar
1/4 cup water
1 tablespoon lemon juice
3 tablespoons corn starch dissolved in 1/4 cup water
1-2 tablespoons butter
Double Crust Pie crust (recipe follows)

Directions
1. Preheat your oven to 350° F.
2. In a large saucepan, mix together grapes, sugar, and water. Bring to a boil and stir until sugar dissolves.
3. Add corn starch slurry and lemon juice. Cook until mixture thickens.
4. Add butter, stir.
5. Place bottom crust into 9" pie plate. Fill crust with grape mixture. Top with second crust and poke vent holes. Bake for 50-60 minutes.


Double Crust Pie Crust

Ingredients
2 cups flour
2/3 cup plus 2 tablespoons vegetable shortening
4 tablespoons ice cold water

Directions
1. Using a pastry blender mix flour and shortening until mixture resembles coarse meal.
2. Add water and knead together until dough forms. If the mixture is too dry, wet your hands under cold water and work into dough.
3. Wrap dough in plastic wrap and refrigerate for 20 - 30 minutes.
4. Cut dough in half and form into two balls. Roll each ball in between two pieces of waxed paper.
