Inbox Favorite - Honey Soy Chicken & Veggie Kabobs

Sometimes I get an email with a recipe that looks so good, I have to try it. Surprisingly, it doesn't happen very often, but I get pretty excited when it does! I got this one from All Recipes on Saturday, and decided to try it for dinner tonight. Of course, in the style of Jes, I added some more veggies and took out the onions (BLECH!) Use what you like!

Honey Soy Chicken and Veggie Kabobs

Honey Soy Chicken and Veggie Kabobs
Ingredients
1/2 cup vegetable oil, divided
2/3 cup honey, divided
2/3 cup soy sauce, divided
2 skinless, boneless chicken breasts - cut into 1 inch cubes
1 teaspoon granulated garlic, divided
2 bell peppers (red, yellow, orange, or green), cut into 2 inch pieces
2 small yellow squash, cut into 1 inch rounds
2 small zucchini, cut into 1 inch rounds
12 - 14 whole mushrooms

Directions
1. In a medium bowl, whisk together half of the oil, honey, soy sauce and garlic. Place the chicken, in the bowl, cover and marinate in the refrigerator at least 2 hours (the longer the better).   
2. In another meduim, whisk together the rest of the oil, honey, soy sauce and garlic. Place vegetables in the bowl, cover and marinate in the fridge.             
3. Preheat the grill for high heat.
4. Drain marinade from the chicken and vegetables, discard marinade from the chicken, keep the marinade from the vegetables to baste with. Thread chicken and vegetables alternately onto the skewers.
5. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.
